Rosemary Hazelnut Truffles

A few years ago I was inspired to substitute olive oil in a recipe that I would normally use butter in.  My creation was to a truffle recipe using olive oil in the ganache instead of butter.  The result is an amazingly smooth and silky truffle with a clean flavor that was all about the chocolate.  Not greasy or oily at all.  It was so good it was “like buttah” as Mike Meyers character on SNL use to say.   But it’s not buttah, its bettah than buttah!!

Rosemary Infused Olive Oil Truffles with Toasted Hazelnuts

Ingredients:

  • 12 ounces semi-sweet chocolate
  • 1/2 cup cream
  • 2 springs rosemary
  • pinch of salt
  • 1 teaspoon vanilla
  • 2 tablespoons corn syrup
  • 1 1/2 tablespoons Colavita Extra Virgin Olive Oil (instead of butter)
  • 1 cup toasted hazelnuts chopped into coarse crumbs

Directions:

Melt chocolate in microwave on 50 percent power for 2-3 minutes.  Stir to finish melting chocolate and set aside.  Bring cream to a simmer.  Remove from heat and add rosemary springs.  Allow to steep for ten minutes.  Remove rosemary from cream and  stir in salt, vanilla, and corn-syrup.  Add cream to melted chocolate and cover for three minutes.  Stir to combine.  Add Colavita EVOO and stir.  Refrigerate for 2 hours.  Scoop out small balls of chocolate and roll between palms to form smooth balls.  Drop balls into bowl with toasted nuts, coat with nuts and roll between palms to press nuts into chocolate.  (If you want a little extra rosemary flavor chop some rosemary and mix in with nuts when coating truffles in nuts).

The ganache was also delicious spread on toast with a drizzle of olive oil and a sprinkling of sea salt and rosemary.  Wow Wow Wow!!
